Granny Green Juice

Sometimes a smoothie is too filling and a glass of water is a little too boring. That is when it’s time to reach for a green juice made from tart Granny Smith apples and fresh vegetables. Homemade green juice has a vibrant taste, is refreshing and healthy without weighing you down with extra calories.

If you don’t have a juicer you can still make this with a blender and a strainer; see our instructions below.

YIELD: 2 servings using juicer, 4-6 servings using blender

INGREDIENTS

    • 1 Granny Smith apple
    • 2 cups spinach packed, or a mixture of juicing greens
    • 1/2 of a lemon
    • 1 inch fresh ginger
    • 1 medium cucumber
    • 2 stalks of celery
    • 3-4 cups of filtered water (if using a blender)

METHOD
Juicer Instructions

    1. Add all of the ingredients to your juicer and proceed according to the manufacturer’s directions.
    2. Serve immediately or keep in an airtight container for up to 3 days. Shake before drinking.

Blender Instructions

    1. Position a fine mesh strainer or nut milk bag over a large bowl. Set aside.
    2. Prepare the vegetables: Peel, core and roughly chop the apple, peel the cucumber, scrape out the seeds and roughly chop. Chop the celery into 3-inch segments. Juice the lemon.
    3. Add all of the prepared ingredients to the blender along with the ginger, greens and water. Blend on high speed until all the ingredients have been pulverized.
    4. Pour the juice into the strainer; you might have to do this in batches depending on the size of your equipment, until all of the juice has been strained.
    5. Serve immediately or keep in an airtight container for up to 3 days. Shake before drinking.
